Cakes can be put in the freezer upon arrival. Thaw in the fridge overnight or on the counter for 2 hours before serving.
The cakes slice best when partially frozen, short of that, refrigerated. The narrow slices will compress under the pressure of the knife if the cake is warm.

The 56 Orange
I twist on the original 56 chocolate cake, this combines both the elements of the 56 and the 42. The orange is complimented beautifully with the chocolate. This cake refreezes beautifully. A great seasonal cake, available all year round! The Cake seems to improve with age. In other words, it lasts. It can also be apportioned and re-frozen. So purchasing in advance of an occasion is always an option! This photo incorrectly shows a chocolate centre. It is a white chocolate.
The 56
For some, gluten-free may suggest that the taste or quality of a baked good has been compromised. Certainly not in this case, as the almond flour creates a delicately exotic flavour and a moist texture. The 56 ounce Cake is so moist, it is like drinking a glass of water! Many have said, “this is the best cake I have ever had in my life”. The Cake seems to improve with age. In other words, it lasts. It can also be apportioned and re-frozen. So purchasing in advance of an occasion is always an option!
The 42
The 42 is a gluten free cake, with no added butter or oil. The cake is made of oranges, almond flour, eggs and sugar. The first thing one notices is the extreme moisture, it is as if it has been infused with a light orange syrup. The orange is complimented beautifully with the chocolate sauce included in the package, but to top it off is the addition of a dollop of blended mascarpone cheese with whipped cream. This cake refreezes beautifully. A great seasonal cake, available all year round!

Inspired by the memory of a cake from his childhood with a similar deep, dark, and delicious chocolate fudge icing that his mother frequently purchased from Woman’s Bakery in Toronto 50 years ago.
Years ago, Bill was struck with a craving for a slice of that “French Chocolate Square”. Since it was no longer available, he decided to figure out how to re-create it himself.
Now, after eight years and more than a thousand cakes, he has perfected the recipe.
